Follow this guide to properly store food within common storage areas
Overview
- Use only assigned storage areas in the facility.
- Do not store items in hallways. Hallways must be clear at all times.
- Use only storage spaces assigned to your kitchen.
- All products must be properly covered and free of leaks.
- Product must be labeled.
- Product must be at least 6 inches off the floor.
- Storage spaces must be kept clean, free of mold and debris.
- Assigned storage racks must be clean, free of mold or debris.
Cooler / Freezer Storage
- Use proper food storage hierarchy.
- All food items must be covered.
- Items must be properly labeled.
- Expired product must be disposed of.
- Items must be free of leaks.
- Product must be kept off the floors and on racks.
Dry Storage
- All product must be stored on assigned racks. Ask your site supervisor if you need to be assigned a rack.
- All product must be properly covered or sealed.
- Product must be free of leaks.
- Empty cardboard boxes should be properly disposed of to avoid pest attraction.
- Items must be kept off the floors and on racks.
- Chemicals stored on the bottom rack separate from food items.
