Safe Food Storage Guidelines

Follow this guide to properly store food within common storage areas

Overview

  1. Use only assigned storage areas in the facility.
  2. Do not store items in hallways. Hallways must be clear at all times.
  3. Use only storage spaces assigned to your kitchen.
  4. All products must be properly covered and free of leaks.
  5. Product must be labeled.
  6. Product must be at least 6 inches off the floor.
  7. Storage spaces must be kept clean, free of mold and debris.
  8. Assigned storage racks must be clean, free of mold or debris.

Cooler / Freezer Storage

  1. Use proper food storage hierarchy.

  2. All food items must be covered.
  3. Items must be properly labeled.
  4. Expired product must be disposed of.
  5. Items must be free of leaks.
  6. Product must be kept off the floors and on racks. 

Dry Storage

  1. All product must be stored on assigned racks. Ask your site supervisor if you need to be assigned a rack.
  2. All product must be properly covered or sealed.
  3. Product must be free of leaks.
  4. Empty cardboard boxes should be properly disposed of to avoid pest attraction.
  5. Items must be kept off the floors and on racks.
  6. Chemicals stored on the bottom rack separate from food items.
